CHILLI CHERMOULA MARINATED BEEF RUMP

This delicious North African marinade will get flavour into your meats before grilling. A perfect recipe to get those authentic summer flavours into any BBQ.

INGREDIENTS

  • 100g coriander
  • 100g flat leaf parsley
  • 2 cloves of garlic crushed
  • 1 red chilli
  • 1 tsp toasted cumin seeds
  • 1 tsp smoked paprika
  • 120ml lemon juice
  • 200ml broighter gold lemon oil
  • 3 Irish rump steaks

METHOD

  1. Roughly chop herbs, chilli and garlic.
  2. Place in a blender and add the other ingredients.
  3. Slowly pulse the ingredients together for 2 mins.
  4. Season rumps with salt and pepper, place on a flat tray and pour on chermuola. Gently massage the meat marinade in to the meat and allow to rest for 2 hours 
  5. Grilled on a red hot BBQ for 2mins each side, rest for 3mins.
  6. Open a beer and enjoy!
